Our coffees are decaffienated using the SwissWater Decaf ® Process.  Many coffees are decaffienated using chemicals like methylene chloride or ethyl acetate.  Almost 80% of the coffees in the world use a chemical process.  And while it is generally considered safe, there shouldn't be any question that water is safe.  The SwissWater© process uses 100% water.
